How do I order from Cupcake Aly?

That's simple! Just call us so that we can discuss your preferences. Emailing is fine but inevitably, we can get this done faster by a simple phone call. Since you won't be able to order over the Internet at this time (Home Cottage Industry law prohibition -- so sorry!), it's best just to call: 512.919.0344!

How can I get my order? Can I order more than one thing at a time?

After we discuss the particulars we set a due date for your order. It will be ready, packaged and available for pickup. If you live in the South Austin area and we can fit it into the schedule, someone may be able to meet you with your order. Otherwise, you can come to our facility to pick it up. Yes, you can certainly order more than one thing at a time. We just need to know the details and due date (very important since perfection takes time)!

How can I pay? Do you take credit cards?

Payment can be made in cash, local check with valid ID, money order, electronic payment or credit card. We take Visa and MC only at this time. When you call to place your order, we would appreciate your providing your method of payment. If by credit card, we can run the card and provide a quick order email or receipt to your phone. Otherwise, your printed receipt will be with your order at pickup/delivery.

What if I want a flavor that is not offered on the regular product line?

Not a problem. Let's discuss it and we can change out flavors for you. Frosting flavors are not a problem either; yet because of the way the sugar alcohols work, we generally stick to buttercream, cream cheese or ganache frostings. We can make some substitutions (butter vs. shortening, milk vs. water) but we don't offer refined sugars as substitutes for natural. We are continuing to experiment with new recipes all the time so there may be some things in process that are not on the current product line because they have not been finalized. We can develop a small batch of your preferred flavor and if it's acceptable to you, the real batch can be made. Since this is all custom made, we do our best to get it exactly as you want it!

Can the cupcakes and cakes be frozen?

Yes, they can, yet it is recommended that you eat them within a few days rather than freezing them, as freezing has a tendency to dry the cake out so the results are not quite as tasty. There's really nothing like fresh. A better solution would be to order another batch when you pick up your current order!

What's the difference between Xylitol and Erythritol?

Both are derived from natural sources. Xylitol is from Birch trees, Erythritol is from Non-GMO Corn. Xylitol has a slightly sweeter flavor than Erythritol and can be used 1:1 as a substitution for refined sugar. Xylitol, like Malitol can be upsetting to your digestive system IF EATEN IN EXCESS. So moderation is the key! Erythritol has a slightly cooler sensation on the tongue than Xylitol and because of its milder sweetness component, sometimes requires a bit more to get the batter sweeter. Erythritol has no known negative side effects, yet pacing yourself while eating our products is recommended for savoring the moments! We generally use Xylitol and we use less so that the finished product is just sweet enough to be pleasant yet without tasting sugary. Both sugar alcohols are very low on the glycemic index scale (under 10). Anything under 50 points is considered preferable on this index.

How much lead time do you need to complete my order?

Since there's only one baker doing the preparing and baking, we would appreciate at least 3 business days lead time; 7 days would be wonderful; yet we realize occasions that just cry out for Cupcake Aly products do come up! So if you are in a pinch, just call as soon as you can (512.919.0344) and we'll figure out something!

What is in the batter that makes it so tasty and gluten-free?

We use a proprietary blend of organic nut flours as a base for our products. Developing the right blend has taken over 2 years to perfect through considerable trial and error! We do not use Garbanzo Bean, Millet or Fava as the consistency is not satisfactory and all have a peculiar smell that we find unpleasant. If we don't like it, we know you won't either; so we won't make it!

Will Cupcake Aly do baking for large events (weddings, showers, parties, etc.)?

Sure. No order is too large or too small. We can get a few trusted folks to help out if need be. Just remember to call in plenty of time -- don't wait! If the occasion will require product for greater than 50 guests, we will need some time to figure out the details and the date. Are Xylitol and Erythritol safe for my pets?

ABSOLUTELY NOT! Xylitol and Erythritol are TOXIC to dogs and cats alike. So if you are accustomed to giving Fifi a sweet treat, stick to pet food. PLEASE! DO NOT give your Cupcake Aly treats to your beloved fur people!
